Is there a Mac Printer Driver for the HP Color LaserJet 1600 ?
I can't seem to find one......

Depends. If your CLJ 1600 has PostScript built-in, then it uses the MacOS X standard PostScript driver. All you need is HP's printer-specific PPD file to have complete control of the printer. You may extract the PPD file from anywhere that it is available--MacOS, MacOS X, or any version of Windows. If you have the non-PostScript version of the printer, then you need the CUPS driver for this printer.
 
I have the same printer. I installed the drivers, followed all of the instructions, and now I have a color laser printer that will only print black and white while using OS X. At least now I'll never run out of color toner. :)
