What Pro XDR Display alternatives are out there that still use thunderbolt, but at a fraction of the price. I want one to plug into my M1 max MBP 16 inch when I get it, that's still pretty good for video editing and has deep blacks? if im spending £4,000 on this thing all maxed out apart from the ssd which I will be going for 2TB, I can't afford the pro XDR display as well.

You are better off with a Thunderbolt dock. Gives you a lot more display options. For example, Acer X32 S should be available soon in the U.S. It is ~$1.3k in Asia with IPS, 4k, HDR1000, and 512 zone mini led. May need calibration however as it looks to be intended for gamers.
