I have a JB iphone 6S+ currently on 9.3.3.

I would like to dump the JB and update to 10.x but when I go to the "Software Updates" section under "Settings", I get the "checking for update" hamster wheel for hours.

I assume this is because of the JB. I know there used to be protections built in to help avoid automatic JB losses.

However, when the 6+ (not S) came out I learned that I had dumbly created a pass-code when I had upgraded my previous phone, that you have to type in to be able to restore from back-up and Apple would never help me recover it.

I now back-up everything through iCloud

I have been an iphone user since the short-lived 4gb original version in 2007--- so I can't start over with all of the data on my phone. So just restoring to factory settings isn't an option for me.

Usually, I just upgrade to the new phone through my carrier and somehow they sort out the transfer.

Is there something that I could do within Cydia to allow for an OA update to ios10? (if the JB is causing the endless checking wheel).

OR if I upgrade through iTunes without restoring from a back-up--can I then restore from my iCloud back-up afterwards just OA?

Any help would be greatly appreciated!

The only way you can update is to plug in to iTunes and hit restore. Do not select update on your jb iPhone. Hit restore.
You can create an iCloud backup and then once you're up to iOS 10 restore from that.
You cannot update your jb device ota via iPhone settings.
