What cable are you using?
Have you had a chance to try a different cable?
What machine?
Which USB port? (prolly won't work off the Keyboard, as that port is USB 1.1)

I'm using an intel core duo MacBook running leopard. Tried different cables, I've tried different ports, I've tried restarting my
Mac, I've tried restarting my iPod, I've tried my iPod with another Mac... What to do??
 
how about re-setting the iPod?
(Don't ask me how, I just know I saw that mentioned somewhere before. Check the Apple info page.)

i had a similar problem wen my ipod touch was new
make sure da drivers for da ipod install corectly on da pc
then ensure that itunes reads ur ipod
if it doesn then try resetin da ipod from the setings in da main menu
open itunes and conect ipod
try syncing it and wen it asks u wat u wana sync...make sure u select ALL SONGS cus the normal settings only allow some playlists to b synced
 
also make sure that itunes is the latest version.
sometimes things just work with latest updates. and if it does i would reccomend doing a full restore on the ipod just to get any kink out of it that might be in it.

Same thing happens with my Nano from time to time. I just did a hard reset (holding the center and menu buttons) and plugged it back in. I don't know if you can do a hard reset with the touch, but if you can, I'd say that could be a solution.

The iPod Touch works just fine with USB 1.1 ever since iTunes 7.6. (There must have been a bug with prior versions of iTunes that made syncing over USB 1.1 a nightmare.) But I would also recommend not using the USB port on the keyboard, not because it's USB 1.1, but because it's not powered.
