Hey,
I have a 2008 Mac Mini 1.83ghz, 2GB Ram etc. and since I upgraded to 10.5.7, when I wake my Mac up from sleep, it disconnects the Wi-fi for about a minute before I can start browsing again... This never happened before... Has this happened to anyone else?

All it takes is one character out of place to break software. If you can't resolve the problem by resetting the permissions, computer, router, network, etc, then just do a time machine backup and restore from DVD. Choose to migrate from your TM backup during the OS install process. Shouldn't take too long and you'll probably clean out some other stuff too.
