I recently replaced my Netgear R8500 router with Eero Pro mesh network. Synology DS1815 connected to network via gigabit switch with the four ethernet ports on the NAS "bonded" as one connection.

Previously, even running the current beta, I had been able to mount the server/NAS in finder and it would remain connected on reboots. It also allowed me to access the root directory of the NAS. Now, I'm only able to establish a temporary mounting/connection to the NAS and only to individual folders. Additionally, if I attempt to connect to the main server name, the "Connect As" button is unresponsive.

The default behaviour is to NOT reconnect at login. Have you configured mounting the share as a login item?

What is being shared depends on the protocol used and the configuration of this in the NAS. If you use SMB there is a smb.conf file ”under the hood” which specifies the shares, normally a folder. You specify the protocol in the url for the share. Maybe you have an old configuration for automount that is different from what you now attempt.

Why this would be different for WiFi vs cable I do not understand. My guess it may have to do with channel bonding.

Nothing changed other than the switch from router to mesh network.
The share is AFP, not SMB and it worked fine before.
Not sure what you mean by WiFi vs cable. Only the NAS is connected to network via Ethernet, the MacBook is WiFi to network.
