Looking at middle 2017 iMac.

Budget will extend to upgrading either i5 to i7 or the 1tb fusion to 512 SSD.

Uses, mainly Lightroom & photoshop, and some occasional GoPro video edits.

Which will provide the best long term future proofing (obviously I'm going to have external hard drive storage).

I would choose 512 SSD. And then get the 27" iMac with a minimum of 16 GB RAM. You can add more RAM yourself in future. (You can't do that for the 21" version).

Definitely go with the SSD. This will give your iMac a good noticeable speed boost and at the same time it is a very reliable storage option, so future proof.
