What's the best RAM for the Power Mac Quad? I've been thinking of getting 2GB RAM (2x1GB PC-4200), but don't know which brand. Is this memory good? Or should I try to get something else that's not "Value RAM"?

Also, would it be okay to use 2x1GB sticks with the included 2x256MB sticks for a total of 2.5GB RAM?

I recommend you look for a reputable dealer who tests and guarantees compatibility of their Mac RAM with your Mac, offers a lifetime warranty and a no-cost return on it if it doesn't work.

The Corsair ValueSelect DDR-2 is IMO a low-cost module and I don't recommend it. Neither Corsair nor NewEgg guarantee compatibility.

You install memory in matched pairs, but you can mix pairs, so 2 x 256 and 2 x 1 Gb is fine.

If you are in the USA, I recommend Data Memory Systems at $89 each

I just took out the original 1GB RAM modules (2x512MB) from my new dual-core 2.3GHz Powe Mac. Planning to sell it. Send me a PM if you are interested.
