I can skip tracks on my ipod with my motorola S9-HD headset but I can't on my iphone with 3.0. Has anyone who has the headset and 3.1 tried skipping tracks and does it work?

The feature that allows you to hear stereo over Bluetooth is Bluetooth profile known as Advanced Audio Distribution Profile or A2DP
The feature that allows you to skip tracks is a Bluetooth Profile called Audio/Video Remote Control Profile or AVRCP.
I don't think the AVRCP profile is part of 3.1.
