Another thing that came up in a different thread. You can hold off buying Apple Care+ when you purchase the Mac.
Buy it later and, apparently, you can then use the gift card. To confirm that, we'd have to check to see what the restrictions are on the gift card — perhaps it applies only to hardware, and cannot be used with an extended warranty.
Turns put it can be used for lots of things, not just hardware.

But Apple Care is not mentioned. However, there is this at the Apple forums:
”We understand from your post that you would like to use your Apple Gift Card to purchase AppleCare. The type of gift card you have will determine what it can be used for. In most cases you would redeem your gift card and add it to your Apple ID to pay for your AppleCare. If you do not wish to redeem the full balance of your gift card to your Apple ID then you should contact Apple Support for additional assistance.“

It seems to be the same guidance quoted here at MR:
Calling Apple seems in order, but it'd be best to get an answer in writing. Perhaps ask the question at the Apple discussion forums and hope an Apple support person responds… Or, call Apple Support while placing the order on line so they'd walk you through it.
I'm interested in doing this, too, so if I find out anything, I’ll post back.
In the meantime, maybe some MR member who's done this can chime in!
