Is it better/safer to charge the (new) iPhone using Apple's MagSafe Charger or the charger that comes with MacBook Pro (M1 Max)?

If the latter, which cable is better? MBP's or iPhone's?

Doesn’t really matter. One could argue that wired charging is less damaging due to less heat than wireless, but there’s little evidence that it affects iPhones in a big way.

Slow wired is considered better than fast wireless charging, and it’s all down to heat. But again, I wouldn’t worry with an iPhone on a name brand wireless charger.

I put my phone on a wireless charger each night and pick it up in the morning. No unusual battery degradation.

Safety wise? Use name brand chargers and cables, discard broken cables.

Your MacBook charger will be perfect, read up on the USB Power Delivery standard if you want to know how a big MacBook charger can be the perfect iPhone charger. 😊
