Question about data on the iPhone

So now that the iPhone has been fully unlocked, I plan to use one in Canada on the Fido/Rogers network. However, the data prices are through the roof here so I have a few questions:

1) Can you turn off EDGE completely and use only wi-fi?
2) If I don't press the stocks or weather icons, will it update by itself at regular intervals?
3) And this I'm pretty certain of but can you set the mail app to only check for mail manually?

Yes if you hack it and unlock it you dont have to enter you networks info for data support.
2 if you dont check the stocks or weather and since you'll have no edge available it wont update unless you're connected to wifi

Thanks but is there a way to turn off EDGE even if I am connected to the data network? Because I text a lot and have to use EDGE for that

Good question, you'll have to look into hacktheiphone site with more details on that.
It gets a little complicated.
