Ok, so I really need a new iPod, so I am looking at an iPod Classic. I understand there are rumors about new ones coming out possibly the 9th, so my question is this: if I pickup a new iPod Classic with Snow Leopard Friday, since the 9th is within the 14 day period, if I go in there if they have new ones, can I exchange it for the new one?

Yes, you can still return it and swap it for a new one.

Note that there could be a restocking fee though, usually of a few percent. Why not just wait?

I would, but it'd be nice to get it tomorrow when I get SL, and I have been iPod-less for a while.

I might go to Best Buy today to get it, since its not far, and I get an even longer 30 day return period. Won't be buying their 'Product Service Plan' again if I do go. They screwed me over once, and they won't do it again.

Yeah, just wait. You never know what they'll announce so just save yourself the headache of a possible return. I know waiting can be agonizing but it's the smartest thing to do in your case.

If you are that desperate, just buy a cheap mp3 player.... I mean, is it really worth the hassle for a weeks worth of iPod?

At a pinch if you must buy new and apple, go with a well packed shuffle.
