I know someone's instagram ID but I am not following him nor he is following me, if I click on him and look at his profile and pictures and do not leave any like or anything, could he find out my ID or any traces in his setting or anywhere that I've ever visited? Since I am not familiar with IG and IG always requires me to log in

If you just visit a profile, the other person won't know the visitor is you. The person will only know there's one view.
Instagram (Meta) does know though, but they use that data for themselves (to target you with ads).
