I'm really getting fed up with the apps crashing on my iPhone. Does jaibroken firmware work better (no crashing)?

What jailbreaking software should I use if I do it? Is it possible to go back to the regular firmware after jailbreaking?

Theoritecally, the clean phone should work better compared to the JB one.

you need to tell us what is your phone, 3G or not, what is the firmware and wht is your PC operating system so that we guide you to the best way to JB.

It's a 3G with the latest firmware, and my PC has XP pro.

jailbroken firmware does not work any better. if anything it would be probably slightly worse. this is generally made up by all the alternative apps you can get but that depends on what your needs are.

Here is a tutorial for you to jailbreak.

If you're experiencing problems, you may want to go ahead and restore first. Sync in iTunes first, then restore, and after restoring, find your iPhone icon in iTunes, right click on it, and restore from back-up before running QuickPwn.

Already been stated here but I'll add a little...Jailbreaking will not fix 2.1 issues (crashing, lagging, etc) but does add a lot to the phone in general. Themes are great, apps are abundant and its great fun to "mod" your phone to your liking. I do have to disagree that Jailbreaking will make your firmware work worse. I think it depends on what you add through Jailbreaking rather than Jailbreaking itself.

With said, as Confuzed indicated, use Quickpwn to Jailbreak.
