question about jailbreaking

I just jailbroke my 3GS and all is going well. It's fun to mess around with customizing the phone and getting some unapproved apps (Google Voice for example...). My question: Is it safe to backup in iTunes still? Like, if I have to restore my phone (due to an issue or if I just don't want the jb anymore) will I be able to use the backups I've made since jailbreaking?
