So im going through some stuff on my mac to see whats 1080p, one thing i dont understand.

It says, 1080p, 720p, SD then it says (720p downloading)

Does that mean, i can only stream 1080p, or something

Check immortals which is on the top for example. It clearly says

HD: 720p, 1080p
(Downloading 720p)
 
iTunes preferences -> Store -> Select 1080P for HD preference download

All movies will show up as 1080p downloads, no more 720P
 
Nevermind

If you go into itunes settings, and select store, you can change it to 1080p.

Did you go into iTunes preferences and show that you are interested in the 1080p downloads? On a Mac version of iTunes, that's Preferences, Playback, "Preferred Video Version" and Preferenves, Store, When downloading HD videos, prefer 1080p.
