If I have a 2TB Fusion Drive, with less than 128GB of data stored on it, should it, in theory, be functioning as an SSD? If so, is gaining the ability to convert to APFS worth splitting the Fusion Drive anyway?
 
No not “in theory”, in actuality. If you have less than 128gb on your 2tb fusion drive, you are operating solely off the SSD...In my opinion, no, APFS is not worth giving up the convenience of the Fusion drive. Of course, YMMV, depending on your data management needs.
