Under my Apple ID I have one trusted device and that would be my iPhone. However, I don’t have any other Apple devices only the my current iPhone as the only trusted device.

My question is, just in case I need to perform a factory reset using the Erase All Contents and Settings, will my iPhone still be listed as my trusted device under my Apple ID account or do I need to re-add it again?

Assuming that I am still signed in to my Apple account BEFORE doing the resetting. In other words, not signing out.
 
It's probably not going to work how you think it will work. If the device is wiped, how is it going to send you the notification? Apple IDs these days have to have a phone number attached, that will work even if you have no trusted Apple devices available.

I agree, if you have the same SIM card it should set up again ok, but for safety in future, in iPhone Settings, [your name], sign-in & security, two factor auth, you can add the number of a fsmily member or trusted friend who can receive 2FA codes.

Reset all settings should not sign you out of your account, although reset all settings has changed its remit recently and may change again in future. It used to wreck your home screen, now it doesn’t seem to.
