questions about changing hard drive in MBP

I've just sold my 80GB HDD in the Marketplace to help ease the net loss of my future purchase of a 160GB HDD (Hitachi TravelStar). However, I would like to know if there is some way to create an image of this HDD (I have a large HDD in my PC that could hold it). Maybe Disk Utility? After that, how do your format a Mac HDD? The restore disks? I'm pretty new to Mac, so please forgive me for my incompetance!
