iPhone Questions: First time jailbreaking- need answers

Hey guys its my first time jailbreaking and i have a couple of questions:
So i restored my phone and m about to add the jailbreak. Will this be set up as a new phone? i'm confused. Can i still add music from my itunes library? if my usual iphone is named "John Doe" and thats the back up.. then do i still use that for the jailbroken phone??

ok and once its jailbroken i can restore from an old back up right? and for future syncing id have to stop my itunes from automatically backing up right?

No.

Carry on backing up as normal to iTunes and or iCloud.

Your jailbreak info is not backed up.

There are jail break tweaks to do that.
Apt backup being one.

If you want to be ultra careful then nite down the day you restored prior to jail breaking and use that back up if ever necessary.
