I haven't been able to find this info anywhere, maybe some of you could help?

I know the iMac Pro uses 2 NVME SSD, but are they fused to appear as only 1 storage drive? If so, would it be possible to "de-fuse" them so they appear as 2 drives? Also, are they always sold full, like is the 1tb storage configuration two 500gb SSD?

Yes, they are in a RAID 0, and as for de-fusing them. You could partition out your 1TB to be two 500GB partitions using Disk Utility. Yes they are always sold full, as the 4TB is two 2TB SSD chips ect.
 
I don't recommend tu un-RAID them. You will get half the bandwidth out of them. It's possible, thought, but you loose one of the main advantage of the iMac Pro: its I/O speed.
