I am getting my mom a Mini tonight that only has 1 gig of ram. Will it be enough for web surfing / email / some youtube? You know, Mom stuff...

Probably, I'd get 2GB for future-proofing, but for basic stuff 1GB should be enough.
I will upgrade her in the near future, I just don't want her to be stuck with a system that beach balls for the next month.

I think 1GB should be fine then, note that I don't own a Mini, but have used other Macs with 1GB RAM and it has been fine unless you were doing lots of high end stuff - though now I have 2GB in my machine.
 
I have a 2009 mini with 1GB RAM. It runs as well as my 2006 Core2Duo MacBook, which has 2GB RAm.

Unless you have a buttload of programs open (iphoto, imovie, itunes, handbrake etc.) then 1GB will probably do for now.

It's much cheaper to upgrade the RAM yourself, but it's not for the squeamish. I'm going to upgrade mine to 4GB once the mini's not to shiny and new. But that's only because I'm greedy, and do a lot of video and graphics work. And run games :)

I noticed the mini beachballed when installing new apps more then my macbook with 4GB in it.

Good news is the My Mom loves the Mac~!
 
Mac Mini Solo

If you are just doing web surfing, email, iLife apps you will be fine. I have a Mac Mini Solo with 1gig in it and it does fine for me.

1GB in my 2.26 mini at the mo, runs plex / internet fine

also does a good job of ripping DVD's and using handbrake

I will be throwing in 4GB when the 7200 500GB HDD's become available

that said, plex runs on this and remote links to 8GB mkv HD movies with no problems whatsoever
 
I had to use my mini with 1gb for a day while I waited for the upgrade and I have to say I was actually shocked how well it ran with 1gb of ram, until I opened VMWARE.....
