I noticed this too. Then I read they need to be encoded to H.264 for them to work in Safari.

Has anyone seen any kind of 3rd party quicktime software for the iPhone yet? I haven't been able to find any yet, it seems odd apple wouldn't support the full quicktime, but it may be their method of forcing content devs to upgrade to h.264...
