Whenever I open a video (i've created) in quicktime and try to export it, I get an error message saying...

"You don't have permission to save the file "..." in the folder "desktop". You don't have permission"

Any ideas why this happens or how to fix it?

Right click your desktop, click 'Get Info'.

Under sharing and permissions, click the padlock at the bottom-right and enter your password to unlock. Ensure your username's privileges are set to Read & Write. If not, or you don't see your user listed, click the + icon at the bottom-left and then add your user in as Read & Write.

Should work now?

Sorry to hijack someone else's thread, but I recently encountered the same issue. My user account has R&W permissions but Everyone has 'no access'.

I launched a VM of 12.2.2 (to check defaults on a fresh installation) and Everyone has R&W permissions. I can't find an answer yet as to if that's the correct defaults. I don't want to have to create yet another test account user but I might have to, ugh.
 
I figured out a way but it's ugly. Share your Timelapse from QuickTime Player to Photos. Drag to the desktop, if you try to watch the .MOV Quicktime can't open it. VLC works to view. To make it watchable in QuickTime I ran it through Handbrake and converted it to MP4.
Changing permissions did nothing.
Bonus, the size dropped by more than 50%.
