I've turned off spatial audio, but Quicktime Player is still tracking movements.
How can I stop QTP from doing that?

"Mac: Choose Apple menu > System Settings, click the name of your AirPods in the sidebar (you may need to scroll down), then click Stop Using Personalized Spatial Audio."
I already did that, and Personalized Spatial Audio is turned off.
Except for Quicktime Player, which refuses to recognize the setting.
Is there a separate setting for QTP somewhere?

As "You can turn Spatial Audio and head tracking on or off for each supported app." you could try to turn it back on, then choose "Fixed: Turns on Spatial Audio without head tracking."
 
Interesting suggestion. VLC works properly, so there's something in Quicktime Player that bypasses the setting in the OS.
I'll stick with VLC.
