Quit an app completely

Is there any way to quit an app completely outside of rebooting on 3gs? For example, ipod app stays open after quitting. MemoryInfo app shows running processes.

Used to be you could hold home button for 5 seconds when in an app and it would completely exit.... now this turns on Voice Control.

Hold Sleep/Wake until the red slider comes up, then hold the home button for a few seconds.
That's the new system.
