Using OSX's disk utility is it possible to make two striped RAID systems and then take the striped RAID's and merge them into a mirrored RAID? That way I can get the efficiency of the striped system and the piece of mind of mirrored. Im thinking about using 4 disks. Is there a way to add on more disks later without reformatting the RAID?

I would really suggest that you look into a level 5 array for what you're looking for. You use 5 drives, and 4/5 of the total storage space is used. If one drive dies however, its data can be recreated from the other 4. They're actually going down in price significantly right now.
