I have a 24 inch 2.4 core duo will I notice a worthwhile difference from 2 gigs ram to 4 gigs. I use aperture a lot plus encode movies with video monkey.
 
Definitely. However, remember that your iMac can take up to 6GB of RAM so I might as well pay a bit more to get 2GB more RAM.
 
I have the early 2008 iMac 8,1. its maxinum ram upgrade according to apple is 4gb's. On the OWC website it says it can take a 6gb's. Am i fine having 6 total.

and how much diffrence will it make since right now i only have 2gbs

Yes. 4GB is the official limited stated by Apple but 6GB has been tested and it works flawlessly.
