Hello

I heard that the amount of RAM of an iMac cannot be upgraded after purchase.

Is this as well the case for a iMac Pro (2017)?

27 inch iMac ram can be upgraded easily, there’s a door on the back of the machine. 21 inch and iMac Pro require disassembly.
 
Replacing my 2x4 RAM in a IMAC 2020 27 inch with 2X32. what slots should I use to put these modules in for optimal performance

For iMac Pro, there is no traditional "back door" for swapping out/upgrading RAM. This means you have to take off the front screen and disassemble other internal components to get to the RAM.

Not impossible, but you'll need to know what you're doing and get some replacement sticky strips to re-attach the screen.
