Hello
I am busying upgrading my 5.1 which currently has a single processor tray
I have got my hands on a dual tray and am going to order 2x X5680's
Can anyone suggest best value-for-money RAM modules?
And is the it still considered a good idea to leave channels 4 and 8 open or is that not a thing anymore?

As far as I know the recommendation is still for 6 vice 8 sticks for dual trays. Here's some good advice from @tsialex on ram - RAM Recommendation. This is for 16GB modules (Samsung 16GB PC3-12800 DDR3 240-Pin Memory Module (M393B2G70DB0-YK0)

I'd search eBay (dont know your location) for e.g: " 1333MHz RAM Mac Pro" and look for a major seller with 100% positive votes.
Triple Channel (3x for single/6x for dual CPU) is indeed recommended , unless with e.g. 6x16GB your MP is still running short on RAM.

Maybe I can ask another question...? Like I say, I have a dual tray. I am planning on buying 2x Intel X5680 cpu to put into dual tray. Is it true that there is little difference in performance between the X5680 and the X5690's?

There is a big difference in price

I work mostly with Photoshop, big files

Yes, there is little difference in performance and price is almost double...
Besides you'll need 2x CPU ...
IMO the difference in performance might be marginal in real life.

As a side note: in case your MP is a flashed 4,1 to 5,1 (from 2009) , you'll need delidded CPUs for the DUAL tray.
The single 4,1 and single/dual CPU 5,1 (2010/2012) need "normal" (lidded) CPUs.
