If I buy one of the mac minis from 2007 and my own RAM for it, would i be able to take them into the apple store and have a genius do the upgrade? I do not want to attempt it myself because the older minis have the case that is tricky to open.

A buddy of mine called Apple about the same thing for his 2009 and they told him they would not do it. He ended up buying RAM from them. Not saying this is true for all Apple Stores, just the one near me.
You might try a non-company Apple Store like a local repair depot. They don't have any obligation to adhere to Apple's policy in this regard (except for warranty work, which doesn't apply here).
Lots of non-Apple, but authorised repairers will want you to buy RAM from them which will usually be cheaper than getting it from Apple but not as cheap as you can buy elsewhere. Or they may charge a bit extra for the repair job. After all they do factor in the profit they make from selling RAM into what they charge for doing RAM upgrades.
I just did the ram upgrade on my 2007 Mini. This is the first repair/upgrade I've ever done to a computer (apple or pc).
The case was a pain, just be patient and you will be ok. I actually used a very small flathead screwdriver and got it done. A wider screwdriver or putty knife would've been ideal.

Ok, thank you for the feedback. If I decide to get one of the older mac minis I'll probably just try to get one with the RAM already maxed out. However, if need be, I'll find a nearby repair center. I don't want to attempt it myself as I've never done computer work and this seems a bit complicated for my first time.
Slightly off subject, but you might want to reconsider getting the older Mini. I've read that the upcoming OS 10.8 (Mountain Lion) wont work on Minis older than 2009. This might not be 100% true, but something to keep in mind if you plan to use the mini for several years.
