I want to Re-Jailbreak my Iphone because I am having some problems. Do I need to restore it with 3.0.1 using iTunes then redsnow or can I go directly to redsnow? Thanks

Apple quit signing the 3.0 and 3.01 IPSW's so you will not be able to restore to either of those. iTunes will only allow you to choose 3.1

If you want to re-do the current jailbreak, I think there is a way to still do that. Make sure you choose set up as new phone so none of the gremlins come back.

If you are at 3.1, you can't downgrade unless you cached your ECID with Saurik via Cydia. If not, no dice, sorry.
