Re-wrapping text in Mail

Does Mail have no re-wrapping feature, or do I just not find it?

In Thunderbird, Entourage, and Outlook is a feature that allows to automatically re-wrap paragraphs to get back to a nice text flow after taking out some text pieces. That is especially handy in quoted text. I don't find this feature in Mail.
