I recently came across an article with Tips & Tricks. However, it does not work because the options mentioned in the article do not appear on my Apple Watch.

Emails only from VIPs
Go to the Apple Watch app for iPhone and scroll down the menu. Select Mail > Custom > Tick VIPs. Now you will only get alerts when your VIPs email you.

Could someone please post step-by-step instructions? The primary goal is to not receive any emails on my Apple Watch. If I can't do that, then the next best option is to receive email only from VIPs.

Thank you.

1.) Wake iPhone.

2.) Open the watch app on iPhone

3.) Scroll down to Mail

4.) tap Mail

5.) Select “Custom”

6.) Select Notifications OFF

You will get mail still; however; you’d never know until you open the mail app on Apple Watch.

This is the closest thing you can do that gives you almost what you want.
