My workflow is a three display setup. Looking to move to 3 4K displays - at least 27". Mac is used for multiple VM's, coding/compiling, plus general purpose work. There isn't a "need" to move to 4K, other than I stare at the monitors 10+ hours per day and want the best image possible. I prefer the Mac Pro over the AiO iMac for various reasons.

What would be a good adapter to drive 3 4K monitors at 60 Hz refresh? Also any recent 4K displays you would recommend?

Netkas knows best. I second the recommendation for a 980 or 980TI. The Ti upgrade is a no brainer - same core as a Titan X with just barely under the performance and not that much more expensive than a 980. However, many cards will simply 'drive' a 4K display at 60Hz. I run three screens (2x 1080p and a 4K) off of a single GTX 660, which is a very old card by today's standards, and with El Capitan's Metal API, it handles it very well. I'd still recommend going all out on a new card, though. 980 Ti is the way to go.
