This might not be the right place, but I've started a new workout hobby, circus arts (hoop, trapeze, rope, silks, etc.) and I would like to be able to record my workouts, but there is a strict no watch rule, and putting it on the ankle isn't an option either.

Curious if I can record a workout while just wearing chest HR monitor and have the watch off and stored several feet away. Start the workout on the watch and walk away?

The watch will pause the workout if it detects no heartbeat.

It does look like with iOS 17, you can start a workout from your phone, and it sounds like this doesn't involve a watch. I don't know if you need to be subscribed to Fitness+ to do this.

I’d think you need a “smart” strap that can connect to the phone or the watch, and would likely need an app.
I would think those exist but honestly no idea
