Hi, if I install a standard non-flashed Metal-capable GPU in my Mac Pro 5.1, I won't be able to see the boot screen: does that affect the Recovery Menu, too?

Won't affect. Recovery partition has its own GPU drive, doesn't need boot screen at all.

Depends if the GPU is supported by Recovery. Recovery has drivers for AMD GPUs [Polaris (10.13), Polaris and VEGA (10.14), Polaris/VEGA/NAVI (10.15)] and the display will work after the GPU drivers are loaded - this takes around 3 minutes.

NVIDIA cards only work with Recovery if the GPU is a Kepler one, GT 6xx and 7xx cards. Maxwell and Pascal don't work with Recovery.

GTX 750 and 750Ti are Maxwell cards, not Kepler, even if starts with 7xx, while GT 750M is a Kepler card and used on late 2013/mid-2014 MacBooks Pro.

I plan to buy an RX 580. It's Apple-recommended and right now it's maybe the best bang for the buck. If I can buy a not-flashed one, I would spare 100-130€.

I've had mine for 20 months. Running 10.14.6. Boot into recovery mode from time to time - no issues.
Haven't missed "boot screen" - not once. But I run Mac-only environments.

I have the rx570 card. In order to access the recovery mode I always need to unplug both my two 4k TV monitors that are connected to the HDMI ports. Otherwise recovery mode hangs on startup. If I unplug them it works fine with my third monitor that is connected through DVI. I'm using the recovery disk from Mojave 10.14.6.
