So I downloaded some third party software so i could install a later MacOS version than what was compatable with my current model Mac-mini. It's been a while and I can't recall where I got it from. There was also an option to change the version of MacOS in recovery mode. Now when I go to recovery mode I have High Sierra instead of the version that shipped with the Mac. Is there some software out there that will allow me to change the version again? I've searched google for about 45 mins with no luck and was hoping someone could point me in the right direction.

To clarify I'm looking to change the MacOS version that is on the recovery partition.
