$50 price difference
Core 2 Extreme has 500GB HDD, Core 2 has 320GB HDD
Core 2 has faster frontside bus and more L2 cache
Core 2 Extreme is pre-refresh

Everything else looks the same...which would you buy and why?

I'd get the 2.8 GHz Penryn 6 MB L2 Cache iMac. I don't think you'll be terribly desperate for onboard hard drive space with FW400/800 love.

Where did you find these refurb deals?

Since 100 percent of the recommendations :))) were for the Penryn 2.8GHz, I pulled the trigger on that one this morning.

Good work. I've found that buying a refurbished Apple is well worth the wait to save some money and the service is just as good too. :D
