I've been checking Apple's refurbished web page over the past couple of weeks for a 2021 iMac and always saw a dozen or so machines offered. This week there's not ever been any and I usually check very early in the morning. Does anyone have any inside info on why the 2021's stopped showing up?

Probably all hands on deck getting the site and distribution ready of the iPhone 13 and iPad.
Also with all the added traffic and general Apple frenzy around launch. People might be snapping up the refurbs much faster than usual.
