In the Apple Refurbished store I have seen iPad Mini's showing them originally released in 2015.

I doubt Apple is selling 5 year old product as refurbished, but wonder how old an individual iPad mini probably is.

I know I can check the serial number after purchase, but don't know if the serial number is available pre purchase.

It would be a Mini 4, as they were originally released in 2015. They give the age of the model itself, not the age of the unit you will receive. Apple only discontinued the Mini 4 18 months ago when they released the Mini 5, so I am not surprised that there are still some refurb Mini 4’s available, as some customers would have traded the 4 into Apple when getting the 5.
