Reinstalling os on new imac

Ok so when my iMac comes in I plan on reinstalling the os to clean it up. I know from doing this in the past there are multiple programs that get installed with the os I.e. Quartz. My question is what is safe to leave out of the fresh install and what parts are vital

Is this a brand new iMac or a used one? I've never head of anyone fresh installing a brand new machine......well. other than me with Windows boxes as most manufacturers include "their stuff".

It's brand new I do it to remove language files, and hoping to be able to not install some drivers or even apps if anyone can give me an idea of what is safe to leave off
