MP 1,1-5,1 Reinstalling OSX Sonoma with OpenCore Patcher

Hello folks at Mac Rumors,
New here.

I have recently bought a Mac Pro 5,1 2010 version for 500€ threw ebay.
Unit came with 3 discs and 128GB ram. It came preinstalled with sonoma and OpenCore patcher inorder to run it.

I wish to switch system drive to a larger drive to make sure that the system driver is clean and a bit larger.

What process would be the easiest to do this? I intend to remove the old system drive once the new drive have been initiated.

The basic steps from the guide are:

1. The first step of ensuring whether your model is supported is by checking the Supported Models page.
2. Download and build macOS Installer
3. Run the OpenCore-Patcher.app
4. Reboot and boot OpenCore

You can skip step 1 as you already know it's supported, but you'll need to add a step 3.5, remove existing drive and install larger drive.
