"Released" all apps from Categories - over 9 page limit, apps now gone?

In anticipation of the 3.0 Jailbreak release, I removed all apps from Categories. This then put me over the 9 page limit on the iPhone for showing apps. In turn, I'm now missing a ton of apps that were once in Categories. What happened to them?

Are they also gone from iTunes ? If so, I guess the excess went "poof".

Yes, most are not in iTunes.
