I'm beginning to think my Apple Watch 3 is too old to do this. The "remove on watch" and "remove using Watch on iPhone" suggested everywhere don't work.

On the watch, the icons giggle, but they don't all have an "X" that allows them to be removed. Only one did, and at least that one worked. I can't get rid of all the fitness functions in this way.

On the phone everyone says "Go to Installed on watch" menu. I don't get that menu at all.

curious what apps are you trying to remove on your AW S3?
Some apps on iOS‘ companion app for Watch you can disable showing on Watch which essentially uninstalls them. Core apps will remain of course.
 
I'll grant you the core apps observation. Some that would not go away are no surprise. Apple's idea of a core app is probably different from mine. I'm not interested in any of the activity loggers etc.
 
It's the way of the world. You could argue entertainment systems have nothing to do with the core functionality of a car, but I imagine these days any modern car you can buy anywhere in the world comes with something that qualifies as an "entertainment system". Even if it's an FM radio attached to a speaker...
