Same paradigm as on a phone. Tap-and-hold on the apps screen until they start dancing, then tap the "x" to delete. Click the crown when finished.

There are still some you can't ditch.
 
Yes, I had to double check with my wife, but we both agreed I would not benefit from cycle tracking, so I deleted the app..... ;-)

But, as the article points out:

Not all of the built-in iOS and watchOS can be removed, however. Some, like Heart Rate and Messages, will remain.
 
Thanks, I thought you still couldn’t delete any of them. This is a good start, now they just need to let us delete 98% of the rest and we will be all set.

This is the only built in app I removed. Won’t do me any good for same reason. Didn’t feel like scrolling past it every time I tapped the crown and went to my app list (I use list mode instead of icon grid).
 
you can also do it on your iPhone , use the watch app, scroll down to "installed on apple watch" and turn off what you done want ...

Thanks, I know it's much faster and easier than doing on the watch
but the problem remain with major Apple apps
