I just signed up for Apple Music for a 3 month trial figuring it can't hurt.

Well it did, after 5 minutes I realised the service wouldn't be of any assistance to me (after 5 pages no artists I liked came up and it wouldn't let me continue setup) so I cancelled the subscription renewal.

I figured I'd go back to iTunes match which seem fine to me last time I had it (when it was way more expensive).

Problem is - now that Apple Music is enabled, it totally changes my iTunes menus, and I can't work out how to stop Apple Music from running altogether.

Leading me to the TLDR version of the question - How do I remove the service from my account (given I've already stopped renewal)?

Thanks, I now don't see the Apple Music, however I still cannot find any iTunes Match information?

There used to be an option Match in the menu.

All I see now is:

My Music (none of the songs show cloud icon)
Playlists
Radio
Connect
iTunes Store

There used to either be a Match option - which either signed me up for match, or let me run the match process on my songs.

That was there until I signed up for Apple Music.

Matter of fact, the option reappears if I log out of my account, and disappears again when I log in.
 
iTunes Match would be under Account menu.

There used to be an option Match in the menu.
The settings for iTunes Match have been rolled into iCloud Music Library together with Apple Music, i.e. disabling iCloud Music Library will also disable Match and vice versa. The old "Update iTunes Match" menu entry is now under File/Library/Update iCloud Music Library.

As far as I know it is not possible to completely get rid of Apple Music before the subscription expires while continuing to use Match.

The Match option in the Account menu is only for signing up. It disappears once you are a subscriber.
 
But how do I get to what used to be the 'match' stuff, that let me do the matching etc.. review it etc?
As I wrote, Match is activated by enabling iCloud Music Library. If you want to manually trigger a scan of your library for changes, use File/Library/Update iCloud Music Library.

Not sure what you mean by "review"? Nothing has changed in this regard. The easiest way to get an overview is to switch iTunes to list view and enable the iCloud status column. If you want to check the status of your subscription, go into Account Info and check the "iTunes in the Cloud" section.
