Can I take the credit card off iTunes so I wouldn't be able to make purchases on App Store or iTunes, but keep iTunes Match on? So when the subscription needs the yearly money I can just buy gift cards to make up the 25 dollars and it will take it out of there?

Yes, you can. I don't know, however, what will happen when the subscription ends. I would think that it goes off the Gift Card but I'm not 100% sure.

Remember it might be $25 + tax depending on where you live. What you could do is put your credit card back on long enough each year to charge the iTunes Match fee.
