I want to remove a UK iPod Touch from iTunes and replace it with a US iPad. How do I remove please?
 
What do you mean by remove? You do not have to remove anything if you want to sync an iPad with a UK iTunes.
 
Will iTunes let me sync both iPad and iPod at the same time?
Or is it one or the other?
 
Yes you can do this. I have an iPhone and Shuffle syncing with the same iTunes account.
 
Any one given iTunes library can sync with an indefinite number of iPod/iPad/iPhone devices. You could have 30 different iPods syncing to the same library, without problem. If I'm not mistaken, you can have them attached simultaneously, provided you have enough open USB ports; they're seen as different devices in the iTunes Sidebar.

I know you can have two, but that's as far as my experience goes.
